4 apples grated or finely diced
2 eggs
1/4 tsp salt
1/3 cup sugar
1 tsp cinnamon
1 Tbsp lemon juice
oil for frying
Mix all ingredients together in mixing bowl. Lemon juice prevents apples from turning brown. Heat oil in pan on medium high until hot and crackling. Spoon dropfuls of batter into hot oil and form into small cakes. Brown on both sides. Remove and serve. Optional: May sprinkle with cinnamon and sugar.
